Chicken Parmesan Bake

 

I loooveee chicken parmesan but hate all the steps. Pound the chicken, coat it, fry it, bake it. It's too much for a weeknight. So when I came across this baked version, I was blown away by how simple (and healthy) it is! This is a must try!

Ingredients:
  • 2 tbs olive oil
  • 2 cloves garlic, crushed
  • hot red pepper flakes/ground red pepper, to taste
  • 4 boneless skinless chicken breasts
  • 1 jar tomato sauce
  • 2 tsp dried basil
  • 8 oz shredded mozzarella
  • 4 oz grated parmesan
  • 1 5 oz pkg garlic croutons
Directions:

1. Preheat the oven to 350* and pour the olive oil into the bottom of a 9x12 casserole. Spread the oil around the bottom and a little up the sides.

2. Place the garlic and red pepper in the olive oil and distribute evenly.

3. Place the chicken breasts in the dish, making sure they are nice and dry.

4. Pour the sauce and sprinkle the basil over top of the chicken.

5. Add half the mozzarella and half the parmesan.

6. Top with the garlic croutons.

7. Add the remainder of both cheeses on top of the croutons.

8. Bake for 35-60 minutes (depending on how large your chicken is) or until a meat thermometer reads 155*.

9. Serve over pasta!
