Chocolate Chunk Toffee Cookies

I came across these Thick and Chewy Chocolate Chip Cookies by Annie's Eats about a year ago and they were delicious! One day when I went to make them, the cookies didn't rise up like they should have due to expired baking soda. Yikes! The result? Nice thin, flat cookies. Here is my spin on Annie's Eats' cookies, Chocolate Chunk Toffee Cookies.

Nice and thin and extremely chewy, these are quite yummy! Here's the recipe!


  • 2 c plus 2 tbs flour
  • 1/2 tsp salt
  • 12 tbs unsalted butter, melted and cooled
  • 1 c brown sugar, packed
  • 1/2 c sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla
  • 2 bars of chocolate, chopped
  • 1 bag Heath toffee bits
  1. Preheat the oven to 325* and line cookie sheets with parchment paper.
  2. Whisk the dry ingredients together in a medium bowl and set aside.
  3. With an electric mixer, mix the butter and sugars until thoroughly combined. 
  4. Beat the egg, yolk and vanilla into the butter mixture.
  5. Add the dry ingredients to the wet ingredients and beat at low speed until just combined.
  6. Stir in the chocolate chunks and toffee bits.
  7. Place tablespoons of dough several inches apart on the cookie sheet. (They will spread out quite a bit!) 
  8. Bake until light brown, around 14 minutes.
  9. Cool on the sheets for a few minutes and then transfer to wire racks to complete cooling.
