Snickerdoodle Cupcakes


Snickerdoodles. You hear that word and all of a sudden you are craving cinnamon! This Snickerdoodle Cupcake recipe will quench that craving! 

And may I add that it is super simple because it uses boxed cake mix?! Got this recipe from The Cake Doctor. The recipe for the cupcakes is first and the frosting is second.

Ingredients:
  • Cupcake liners
  • 1 pkg plain white cake mix
  • 1 c milk
  • 1 stick butter, melted and cooled
  • 3 large eggs
  • 1 tsp vanilla
  • 2 tsp cinnamon
Directions:

1. Place a rack in the center of the oven and preheat to 350*. Line your cupcake tin with cupcake liners.


2. Place the cake mix, milk, melted butter, eggs, vanilla and cinnamon in a large mixing bowl. Blend with an electric mixer for 1 minute on low speed. Increase to medium and beat for 2 minutes. Throughout the process, scrape down the sides when needed. The batter should be well combined and thick and heavy while still airy... kind of like a heavy mousse. 



3. Place in the cupcake liners. I used one large spoonful per cup. (I usually use an ice cream scoop but my old one broke.)


4. Bake for 18 minutes or until golden brown. When you insert a toothpick in the center, it should come out clean. If you need to bake just a few cupcakes and are not able to fill your pan, fill the empty cups with a little water to help distribute the heat. I was able to get an exact 2 dozen.

5. Let cool on wire racks while you make the frosting, below.

Ingredients:

  • 1 stick butter, softened
  • 3 3/4 c powdered sugar
  • 3-4 tbs milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
Directions:

1. Cream the butter with an electric mixer.



2. Add the powdered sugar, milk, vanilla and cinnamon. Try not to make a mess like I did!


3. Blend with the mixer on low for 1 minute. Increase the speed to medium and beat 1 minute more. It will be nice and fluffy.


4. Frost your cooled cupcakes! I had a bit leftover... great with graham crackers!
