Spinach Pesto


The other day I made Spinach Pesto for dinner. I consulted with Todd and he basically thought it sounded good however when he finally saw the food, it was a different story. He then admitted that he was thinking pesto was something else. Oh well... I thought it was good anyways!

This recipe was made in just 10-15 minutes, not including the time for the water to boil. I was inspired by Inspired Taste. (Check out their food blog... amazingness!)

Ingredients:
  • 1 bag baby spinach
  • 3 tbs pine nuts
  • 2 tsp minced garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cayenne
  • 1/8 tsp nutmeg
  • 2/3 cup olive oil, plus extra for the pasta
  • 1/2 cup parmesan cheese 
  • 1 box pasta
Directions:
  1. Preheat oven to 350*
  2. Bring your water to a boil. Add a handful of salt and a drizzle of olive oil and cook pasta according to the box's directions.
  3. Toast the pine nuts for 3-5 minutes. They can burn pretty easily so be careful! They are done when you can smell them. :)
  4. Add the spinach to the food processor and pulse until it is a fine mush. 
  5. Add the garlic, pine nuts, salt, nutmeg and cayenne and pulse again to mix. 
  6. Add the olive oil slowly through the feed tube as the mixture is pulsing.
  7. Add the parmesan cheese and pulse to mix.
  8. Toss the pasta with about a third of the pesto. Depending on how liquidy you like your sauce, you can add some reserved pasta water.
  9. Serve with a drizzle of olive oil on top.
* To store the pesto: Put in a container and drizzle olive oil on top until the entire surface is covered. Put really good plastic wrap or Press and Seal directly on top of the pesto/olive oil. Store in the fridge for a few days or in the freezer. Great with pasta or chicken!
