Valentine's Stained Glass Cookies

I had a TON of leftover candy canes after Christmas so I decided that I needed to turn them into something. I used rainbow, red and blue mini candy canes and I crushed them all up in my food processor. I sifted them and put aside the fine sugar dust for Sugar Cubes. (Check back later for those!) The leftover "large" pieces (still very small) were used in the centers of the cookies. I was surprised at how good they tasted with the cookie, all in one bite!

You can use any roll out cookie dough that you like but I personally love my BEST Sugar Cookies recipe.

Directions:

1. Roll out your dough with some flour. I rolled mine out about 1/4 inch thick. Cut out your shapes with a cookie cutter and then use a smaller one to cut out the centers.

2. Place the cookies on a baking sheet lined with parchment paper. This ensures that the crushed canes won't stick to your sheet.

3. Using a teaspoon, carefully scoop the crushed cane into the centers of the cookies. Try not to get any on the actual cookie!

This is what happens when you get it on the cookie:

4. Bake your cookies the required time.

5. Let cool directly on the sheet for at least 5 minutes before removing. If you remove and they are still sticky, let them sit a few minutes more. You want the canes to harden.

6. Let the cookies finish cooling on a wire rack.

7. Enjoy!

Beautiful! I plan on packaging these up to go with my Valentine's Day Tea.  Cute tea, homemade cookies and homemade sugar cubes? Can't beat that!
