BBQ Chicken Pasta

Todd loves BBQ sauce so I bought a large jug of it at Costco to use for pulled chicken sandwiches. When the sandwiches were gone, I still had practically the whole jar left. Hmmm... what to do with it all? Then I found this recipe that was featured on the Nate Berkus Show. I adapted it and Todd gave it an 8.6! Unfortunately, I didn't like it as much as Todd, mostly because it was a bit spicy for me. Next time I will use less BBQ sauce. If you have kids that love BBQ sauce, this is a great meal to make! It was pretty easy too.

  • 1 box pasta, cooked in olive oil and salt and drained
  • 3 tbs dehydrated onions soaked in 6 tbs water
  • 4-6 c shredded or cubed chicken (I roasted some chicken thighs that were well seasoned with S&P at 350* for 35-40 minutes.)
  • 3 1/2 c BBQ sauce (I would use less next time.)
  • 10 slices bacon, crumbled
  • 1/2 c chopped scallions
  • 1 1/2 c shredded mozzarella
  • 2 c shredded cheddar
  1. Preheat the oven to 375*.
  2. In a large bowl, mix together the pasta, onion, chicken, BBQ sauce, bacon and scallions.
  3. Pour 1/3 of the pasta into a greased casserole dish and top with some of each cheese.
  4. Layer the remaining pasta and cheese, ending with a layer of cheese.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for 10 more minutes.
