This Corn Casserole was delicious! I got the recipe off
Pennies on a Platter and I didn't change a thing. It's simple enough to make as a side for a weeknight dinner
and it's fancy enough to make as a side for a holiday dinner! This paired perfectly with the
Roast Turkey Breast we had the other night.
Ingredients:
- 1 box Jiffy cornbread mix
- 1 c sour cream
- 1 c shredded cheddar
- 1 can cream corn
- 1 can whole kernel corn, drained
- 1/2 c butter, melted
Directions:
- Mix everything together and put into a greased casserole.
- Bake at 350* for 55 minutes.
I have to give this a try, my two year old will love it! I was already following LF, but added bloglovin because I like it so much better. Stop by www.thenymelrosefamily.blogspot.com any time.

DeleteI made this for dinner tonight... I LOVE it! My kids are crazy and don't want any, which normally I would make them try it, but I don't with this because I want it all myself :)

DeleteI love me some corn casserole! If you add green chilies to it you can call it "Mexican" Corn Casserole. There is another corn casserole recipe that I love that has cream cheese in it. DeleteJust wondering if you had to use the sour cream or could you omit it? I'm not a huge fan of sour cream, so I thought about just not adding it, but then I thought it might be used to add a bit of creamyness to it.
ReplyDeleteI am sure that you could add a little bit of softened cream cheese instead however you don't even taste the sour cream!
