Meatball Sub Casserole

Todd and I have now "officially" been blogging for about three months... maybe less. I am excited to announce that we have over 10,800 page views! Our most viewed post is our Valentine's Stained Glass Cookies with almost 800 page views. Exciting, right? These lovely cookies were also featured on Daily Do It Yourself, a great new blog featuring diy projects from bloggers like YOU!

Enough about us and on with the food!

Remember the awesome oven meatball recipe I found? Well we used it again (yes, twice in one week!) to make this Meatball Sub Casserole (adapted from here). I was a bit concerned... but it was amazing! Tasted just like a meatball sub except without the messy fingers and tons of napkins.

  • meatballs from here
  • 3/4 of a loaf of french bread, sliced in one inch thick slices
  • 2 oz cream cheese, softened
  • 2 tbs mayonaise
  • 1/4 tsp Italian seasoning
  • Dash pepper
  • 2 c mozzarella cheese, shredded and divided
  • 1 jar spaghetti sauce

1. Preheat the oven to 350* and spray a large casserole dish with cooking spray.

2. Mix the cream cheese, mayo, Italian seasoning and pepper together in a small bowl.

3. Spread the cream cheese mixture on the bread slices and place in one layer on the bottom of the casserole dish.

4. Sprinkle 1 c of the cheese over top the bread.

5. Place the meatballs on top, making sure they are evenly spaced out.

6. Pour the sauce on top of everything so that everything is coated.

7. Sprinkle with the remaining cup of cheese.

8. Bake for 25-30 minutes or until bubbly and heated through.
