I have always been a big fan of red chili. It's the perfect
comfort food on a cool or rainy day. I prefer mine with crushed chips,
cheese, scallions and sour cream. Oh, yum! Then I discovered this White
Chicken Chili from a co-worker. It quickly became my new favorite chili. I recently made this for my parents and Grandma when they came for dinner. My mom was surprised at how little time it took to cook! If you are tired of the same old chili, I hope you give this recipe a try!
Ingredients:
- 1 1/2 lb boneless, skinless chicken breasts, cubed
- 1 tbs olive oil
- 1/4 c chopped onion
- 1 small can chicken broth (less if you like it less soupy)
- 2 19 ox cans cannelloni (white kidney beans)
- 1 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp ground red pepper
- Toppings: shredded cheese, sour cream, tortilla chips, scallions, rice, etc
- Heat the oil in a large pot over medium high heat and add the chicken.
- Add the chicken and onions and cook until the chicken is cooked through.
- Stir in the broth and spices. I don't like spicy foods but the amount of ground red pepper in this is just for flavor; it is not spicy at all. If you prefer spicy chili, just add more.
- Simmer for about 15 minutes, stirring occasionally.
- Stir in the beans, liquid and all.
- Simmer for 5 more minutes, until the beans are heated through.
- Serve with toppings!
