Foil Chicken and Broccoli

 

I love an easy recipe that is also delicious. This recipe was just that! Todd gave it an 8.7 out of 10 and asked me to make it again, so it must have been good! All you do is defrost your chicken and throw everything in heavy duty foil and bake. That's it.

Ingredients:

  • 1 pkg chicken flavored stuffing mix
  • 1 1/4 c water
  • 2 large defrosted boneless, skinless chicken breasts
  • 2 c frozen broccoli
  • 1 c shredded cheddar
  • 1 slice crumbled, cooked bacon
  • 2 tbs caesar dressing
Directions:
  1. Preheat the oven to 400* and lay out two heavy duty pieces of foil on a baking sheet. I didn't have any heavy duty foil so I layered three pieces which was the perfect amount of thickness. Spray the foil with cooking spray.
  2. Combine the stuffing and water in a bowl and divide into the two pieces of foil. You will need to fold up the sides a bit so that the water doesn't run off onto the baking sheet.
  3. Place the chicken onto the stuffing.
  4. Top the chicken with the broccoli, cheese, crumbled bacon and caesar dressing.
  5. Bring up the sides of the foil and gently fold over, leaving room in the foil package for heat circulation.
  6. Bake 45 minutes and let the packages sit for 5 additional minutes before serving.
  7. Cut slits in the foil before opening to let the steam out.
