French Toast Muffins


I am not really a french toast person however these French Toast Muffins were absolutely delicious! You can eat them as a muffin or eat them warm with maple syrup on top. Yum!

Muffin Ingredients:

  • 1/3 c melted butter
  • 1/2 c sugar
  • 1 egg
  • 1 1/2 c flour
  • 1 1/2 tsp  baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 c milk
Topping Ingredients:
  • 1/2 c sugar
  • 1/2 c melted butter
  • 1 tsp cinnamon
Directions:
  1. Preheat the oven to 350* and spray a muffin tin.
  2. In a medium bowl, sift together the dry ingredients (not including the sugar).
  3. In another medium bowl, whisk together the wet ingredients (including the sugar).
  4. Add the dry to the wet and mix until just combined; it will be a bit lumpy so don't over mix!
  5. Scoop into the muffin tin; I ended up with 9 muffins.
  6. Bake 20 minutes or until the edges are golden brown.
  7. For the topping, mix the sugar and cinnamon together.
  8. After the muffins are out of the oven, dip into the melted butter.
  9. Coat each muffin with the cinnamon sugar mixture.

  11. Hello Lindsey! This is a recipie that I could really sink my teeth into! I have one similar called French Puffins! My mouth was /is watering even now as I write this. It is hard to concentrate on what I am saying because the memory of the taste of these is clouding my thinking!
    I give up, I've gotta run and make me some!

  12. I want to take these to work and was planning on making the night before. Should I roll them in the sugar mixture before I go to work or can I do that the night before as well.
