Cauliflower Gratin (Low Carb)

- 1 head of cauliflower
- 1/4 c water
- 1/2 stick butter
- 1/2 tsp minced garlic
- 1 tbs dehydrated onion
- 2 c heavy cream
- 2 oz cream cheese
- 1/4 tsp nutmeg
- 1/4 tsp pepper
- 1/2 tsp salt
- 2 c cheddar
- 2/3 c parmesan
Preheat the oven to 400*.
Chop the cauliflower into small florets and place in an glass 8x8 baking dish or a glass pie plate.
Cover the cauliflower with 1/4 c water, cover with plastic wrap and microwave for 3 minutes on high.
While the cauliflower is steaming, melt the butter in a medium saucepan.
Add the onion and garlic and cook for a minute.
Add the cream, cheddar and cream cheese and continue stirring until melted together.
Stir in the nutmeg, salt and pepper.
Pour over the cauliflower mixture and sprinkle the top with parmesan cheese.
Bake for 30 minutes or until golden brown and bubbly.
