Cauliflower Gratin (Low Carb)

Last night (and last minute!) I decided to make this Cauliflower Gratin. I tweaked the dish to make it low carb and it came out delicious! It was so much like mac and cheese that I can see why A Pinch of Joy called it "Mock and Cheese". For eight servings, it has 4.3 carbs. After subtracting the 0.9 g fiber, you have a net carb count of 3.4 carbs! Next time the only changes I would make are to cut the cauliflower into smaller pieces and to use two heads of cauliflower. The ratio of cheese to cauliflower was wayyy too much cheese for me. (Todd loved it though!)

Cauliflower Gratin (Low Carb)

  • 1 head of cauliflower
  • 1/4 c water
  • 1/2 stick butter
  • 1/2 tsp minced garlic
  • 1 tbs dehydrated onion
  • 2 c heavy cream
  • 2 oz cream cheese
  • 1/4 tsp nutmeg
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 2 c cheddar
  • 2/3 c parmesan
Preheat the oven to 400*.
Chop the cauliflower into small florets and place in an glass 8x8 baking dish or a glass pie plate.
Cover the cauliflower with 1/4 c water, cover with plastic wrap and microwave for 3 minutes on high.
While the cauliflower is steaming, melt the butter in a medium saucepan.
Add the onion and garlic and cook for a minute.
Add the cream, cheddar and cream cheese and continue stirring until melted together.
Stir in the nutmeg, salt and pepper.
Pour over the cauliflower mixture and sprinkle the top with parmesan cheese.
Bake for 30 minutes or until golden brown and bubbly.
