Memorial Day & Red Velvet Cupcakes

Todd and I were both very thankful for a three day weekend this past weekend; we both needed it! We spent Saturday working around the house. Todd power washed the back steps and sidewalk. Who knew the concrete was painted blue? I finally got around to cleaning part of the house. I mopped the dining room floor... which is the first time it has EVER been mopped since I moved in! (As embarrassing as that is, it's the truth!) We spent the night together taking a walk around the neighborhood with Banner and then watching the new Footloose movie. (Not nearly as good as the original!)

Sunday we went to church and then Todd went to an O's game. I spent the afternoon relaxing; catching up on TV shows, baking and sewing. (Stay tuned for my sewing project which I will be able to show you all next week!)

Monday morning, Todd and I brought Banner to the local dog park. Two couples from our Bible Study were also there with their dogs, Yoshi and Riley. My friend Lyndsey wrote a great post on it with tons of cute pictures! You can check that out here. Here are my favorite pictures that she took:


In the above picture, Banner is meeting Yoshi and Riley for the first time. Yoshi and Riley have already met. Below is our dog being antisocial... he spent the majority of the time wandering around by himself.


Eventually, with the help of Yoshi pushing Banner all over the field, Banner started playing.


The dogs were all exhausted! Yoshi was the loudest panter of them all.


Here is a picture of us girls. :) We should have asked the guys to pose for one... but we didn't.


It was a lot of fun! We spent maybe an hour or so at the dog park. I made two bags of dog treats each for Yoshi and Riley. I had gotten some dog cookie dough as a fundraiser item at school so I made peanut butter cookies and cheddar oat biscuits. Apparently the dogs loved them!


As for the humans, I gave everyone a Red Velvet Cupcake with buttercream frosting. I transported them in little clear cups wrapped in clear plastic baggies with colored gift ribbon to keep it sealed. I also got to use my new Pampered Chef frosting thinger, which was very exciting!


Since Todd and I are on a low carb diet, we gave the rest of the cupcakes to our neighbors who were throwing a BBQ. They invited us but we had plans to see Men in Black III with our friend Carolyn.

 

Red Velvet is not just for the winter holidays! They make cute patriotic treats as well! Below is my go-to recipe for Red Velvet.

Red Velvet Cupcakes

Ingredients (30 cupcakes)
    Cupcake Ingredients:
    • 2 1/2 c flour
    • 1 1/2 c sugar
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 tsp cocoa powder
    • 1 1/2 c vegetable oil
    • 1 c buttermilk
    • 2 large eggs
    • 2 tbs red food coloring
    • 1 tsp white distilled vinegar
    • 1 tsp vanilla
    Frosting Ingredients:
    • 1 stick room temperature butter
    • 3 1/2 c powdered sugar
    • 3-4 tbs milk/cream
    • 2 tsp vanilla
    Instructions
    Preheat the oven to 350* and line a cupcake pan with paper liners.
    In a medium bowl, whisk together the flour, sugar, baking soda, salt and cocoa powder.
    In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar and vanilla using an electric mixer.
    Add the dry mixture in thirds and mix using an electric mixer until just combined and smooth.
    Fill the liners 2/3rds of the way full; it took me two scoops using a medium sized scooper.
    Bake for 25 minutes or until a toothpick inserted into a center cupcake comes out clean.
    While they are cooling, make the frosting by creaming the butter with an electric mixer on low speed for a minute.
    Add the powered sugar, milk/cream and vanilla and mix on low speed until the sugar is combined, about a minute.
    Increase the speed of your electric mixer to medium and beat for another minute or until your frosting is light and fluffy.
    Add more milk/cream if your frosting is too thick.
    Frost your cupcakes when they are fully cooled.
