I woke up at 5 on Saturday morning to help clean up after Grad Night. Our school PTSA hosts a Grad Night the night after senior graduation each year. It starts at 10 pm and goes until 5 am. There are tons of games, food and fun in a safe environment. Last year I went for a good portion of the night but this year I decided to help with the clean up crew. I got there at 5:30 am and clean up was completed by around 7 am.
Since Saturday also happened to be our Cheat Day from our diet, I stopped for some Dunkin Donuts. Todd and I had planned to get Krispy Kremes but didn't know a local place to get them. Maybe next time!
Right when I got home, I started prepping my Bacon Wrapped Sausages. I got the recipe from a friend but I tweaked it to make it low carb. (See below for the awesome recipe!) Once they were completed, I hopped into my car and headed over to Elise's friend and neighbor, Susan's for the baby shower!
Lyndsey was in charge of food and boy did she prepare a wonderful spread! Elise's baby theme are owls so Lyndsey made blue velvet cupcakes with absolutely adorable fondant owls. She made chocolate chip cookie dough truffles, cinnamon roll lollipops on a cute, handmade stand and more. I brought the Bacon Wrapped Sausages, of course! Melissa had some games planned... all of which I miserably failed at. We had a word scramble, guess the name of the song and guess how many M&M's are in the bottle.
Elise got some really great gifts! We were each asked to bring a baby book instead of a card which I thought was such a cute idea. I gave Elise the baby version of Hungry Hungry Caterpillar by Eric Carle. It's a baby version because it's all fabric and babies can play with it to learn textures and sounds. (How artsy, right?) Melissa, Lyndsey and I also split the cost to get Elise a baby holder thinger... not sure what it's called. I also made Elise a cute flannel baby blanket! It was pretty easy; I used this and this tutorial. This was my first applique attempt so by the time Elise has a second baby shower... why, I will be an expert!
If you want to see more pictures of the event, check out Lyndsey's blog post (where I stole some pictures from).
When I got home, I was starving. Again. So I went out to get a bag of my favorite chip, Doritos. Then I promptly fell asleep holding the Doritos bag. I didn't fall asleep for long because Todd came home (quite loudly) and gave me my brand new camera! You can read about that here. (All the photos in this post were taken with my old camera.) We went out for dinner at Ledo's and Chik-fil-a. I had a free 8 inch pizza for my birthday, an order of fettuccine alfredo, some fries and a cookies and cream milkshake... so yummy! I was planning on going to bed early however we were invited to go see Snow White and the Huntsman. Our friends ended up not able to make it so Todd and I had a nice date... with popcorn! (I love movie theatre popcorn!) By the time we got home, I had been up for 19+ hours and I was exhausted. And I just realized that I spent a whole paragraph practically talking about all the delicious food I ate. Enough boring you, here's that recipe I promised!
Bacon Wrapped Sausages (Low Carb)

by
Keywords: bake appetizer low-carb bacon sausage
Ingredients
- 1 1/2 pkg Lil' Smokies
- 1 lb bacon
- 3/4 c splenda brown sugar
- 1/4 tsp ground red pepper
- Toothpicks
Instructions
Preheat oven to 350 and spray a casserole dish with nonstick spray. You want to use a dish with deep sides since the bacon will produce a lot of liquid.
Cut the bacon into thirds and wrap each sausage with a third of bacon. Use a toothpick to hold each little bundle together.
In a small bowl, mix together the brown sugar and ground red pepper.
Sprinkle the brown sugar mixture evenly over the top of the sausages.
Bake for 45 minutes to 1 hour or until the bacon is crispy.
Serve warm or room temperature.
