Nursery Mural, Cocoa Cauliflower & Quick Parmesan Crusted Chicken (Both Low Carb)

Today marked the first weekday of my first full week on summer break! Woohoo! :) To kick off the summer, I headed over to Matt and Elise's house to paint a mural in their baby room! I was over there about six hours including sitting down to the fantastic lunch they got me from Panera. The room is owl themed and I had consulted with them a few times before today. Elise wanted the owls to resemble the one on a gift bag she received.


The room was already painted a beautiful soft green. All the elements of the mural were hand painted; there were no stencils, etc used. There is a large mural of a tree with two owls near the crib and there is a smaller one on the opposite wall. Here is the before shot of the tree mural:


Here are the after shots! I think the big owl on the right is Matt and the tiny one over the crib is Baby Jordan.

When I came home, I just relaxed and watched some TV. :) I did have some stuff to do (stay tuned for a new project involving a shutter!) but it was really drab and rainy out. Perfect TV weather! For dinner I tried two new low carb recipes and they are both keepers!

First we have Cocoa Cauliflower. I was really intrigued when I saw this online. It came out absolutely delicious! You would never guess there is cocoa powder in it but there is a distinctive "wow-that-is-really-yummy-what-the-heck-is-it" flavor going on. (Recipe below.)


For the main dish we had Quick Parmesan Crusted Chicken. It really quick (hence the name) and really moist. It was also really easy; it was assembled in a matter of minutes with one bowl used! When I asked Todd which he liked better, the cauliflower or the chicken, it took him a long time to answer. (Recipe below.)


Cocoa Cauliflower (Low Carb)

Ingredients (serves 2)
  • 1 16 oz bag frozen cauliflower florets
  • 1 tsp unsweetened cocoa powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 2 tbs olive oil
Instructions
Preheat the oven to 400* and spray a baking sheet with nonstick spray.
Combine all the ingredients except the cauliflower in a medium bowl.
Add the cauliflower and toss until evenly coated.
Spread in one layer on the greased baking sheet.
Bake for 25 minutes or until golden brown. You can leave it in longer if you want your cauliflower crispier.

Quick Parmesan Crusted Chicken (Low Carb)

Ingredients (serves 4)
  • 1/2 c mayonnaise
  • 1/4 c grated parmesan
  • 4 boneless skinless chicken breasts
  • 4 tsp Dixie Diner breadcrumbs
  • Italian seasoning
  • S&P
Instructions
Preheat the oven to 425* and spray a baking sheet with sides with nonstick spray.
Combine the mayonnaise with the parmesan in a small bowl.
Place the chicken breasts on the baking sheet and spread the mayonnaise mixture over top of them.
Sprinkle one teaspoon of breadcrumbs over each chicken breast.
Sprinkle S&P over each breast as well as the Italian seasoning.
Bake for 20-15 minutes or until the chicken is cooked through and the juices run clear.

  4. I love your owl nursery. It's precious! And that cauliflower doesnt sound to shabby either. I love cauliflower but never now what to do with it other than smoother it in cheese. THis sounds like a much healthier alternative. Thanks for sharing on Whatcha Whipped Up Wednesday
