Ingredients (8 "bites")
- 1 medium/large grated zucchini
- 1 egg
- 1/4 diced yellow onion
- 1/4 c shredded cheddar
- 1/4 c Dixie Diner bread crumbs
- 1/4 tsp Italian seasoning
- 1/4 tsp salt
- 1/8 tsp pepper
Preheat the oven to 400* and spray a baking sheet with nonstick spray.
Grate the zucchini and squeeze out all excess moisture with heavy duty paper towels, a thin dishcloth or cheesecloth.
In a medium bowl, combine the egg, onion, cheese, bread crumbs, zucchini, S&P and Italian seasoning.
Using a medium cookie scoop, make 8 mounds on the baking sheet.
Bake for 15 minutes or until golden brown.
