Stuffing Bites (Low Carb)

About a week ago, I made these Stuffing Bites... and Todd ate them... and Todd liked them! I was super surprised because the star ingredient is zucchini! The original name was Zucchini Bites but I renamed them after tasting them because they taste just like stuffing. They were really easy to make; the only "annoying" part being draining out the zucchini. Any tips on this would be nice!

 

* Update 6/5/13: Almond flour can be substituted for the low carb bread crumbs.

Stuffing Bites

Ingredients (8 "bites")
  • 1 medium/large grated zucchini
  • 1 egg
  • 1/4 diced yellow onion
  • 1/4 c shredded cheddar
  • 1/4 c Dixie Diner bread crumbs
  • 1/4 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp pepper
Instructions
Preheat the oven to 400* and spray a baking sheet with nonstick spray.
Grate the zucchini and squeeze out all excess moisture with heavy duty paper towels, a thin dishcloth or cheesecloth.
In a medium bowl, combine the egg, onion, cheese, bread crumbs, zucchini, S&P and Italian seasoning.
Using a medium cookie scoop, make 8 mounds on the baking sheet.
Bake for 15 minutes or until golden brown.
