PB&J Cookies

I was pretty intrigued when I saw this recipe online. I am not a huge PB&J fan myself but knowing that Todd was, I decided to make these. Out of the four or so recipes I tried out today, these were his top fave! Good thing, because they were super simple. You can't get much easier than a boxed cake mix and only 6 ingredients!


PB&J Cookies

Ingredients (30 cookies)
  • 1 box white cake mix
  • 1/2 c or 1 stick unsalted melted butter
  • 2 large eggs
  • 1 tsp vanilla
  • 1 c or 8 snack size chopped peanut butter cups
  • 1/2 c or 6 squares chopped Ghirardelli dark chocolate and raspberry squares
Instructions
Preheat the oven to 350* and line a baking sheet with parchment paper.
Mix the cake mix, butter, eggs and vanilla in a large bowl for about 2 minutes.
Gently fold in the candy pieces. If you find they are smashing when you are chopping them, freeze for a few minutes to firm up.
Chill the dough in the fridge for 20 minutes.
Form into 1 inch balls and place about 1-2 inches apart on the parchment.
Bake for 10-12 minutes.
Cool on the baking sheet for 2 minutes before removing to a wax paper covered countertop.
