Orange Creamsicle Cookies

These cookies were a huge hit with my students (and their parents!) at Back to School Night. (Yeah, I know... that was over a month ago. What can I say? I'm behind!)

Orange Creamsicle Cookies

  • 2 1/2 c flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 sticks softened butter
  • 1/2 c sugar
  • 1/2 c firmly packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tbs orange zest (2 oranges)
  • 2 c white chocolate chips
Preheat the oven to 375*.
Combine the flour, baking soda and salt in a small bowl.
In a large bowl, cream the butter and sugars.
Beat in the egg and vanilla.
Gradually add the flour mixture and stir until combined.
Stir in the zest and white chocolate chips.
Drop rounded teaspoons onto ungreased cookie sheets.
Bake 8-10 minutes or until the edges are golden brown.
Cool for several minutes on the cookie sheet before transferring to wire racks.
