French Onion Mashed Potatoes

Mashed potatoes are one of my all time favorite comfort foods. Whenever I am sick (which is pretty rare), I always want mashed potatoes. When I had my wisdom teeth pulled, did I ask for ice cream? No! I asked for mashed potatoes. :) These mashed potatoes are an easy update to the classic red skin mashed potatoes. The addition of the french onion dip and cream cheese make milk and butter absolutely unnecessary! The french onion dip adds a subtle flavor and is not overpowering. (Adapted from Quick Cooking.)

French Onion Mashed Potatoes

Ingredients (10 servings)
  • 5 lb red potatoes
  • S&P
  • 8 oz softened cream cheese
  • 12 oz container softened French onion dip (sour cream based)
  • 1 1/2 tsp garlic powder
Cut the potatoes into 1" chunks; no need to peel!
Place in a large pot and just cover with cold water. Add a generous amount of salt, a few tablespoons.
Bring the potatoes to a boil and cook until fork tender.
Drain the potatoes and add to large bowl or back into the pot.
Add the cream cheese, dip, 1 tsp S and 1/2 tsp P.
Mash the potatoes and combine all ingredients. I used an electric mixer but you could do it by hand.
Mash until you get the consistency you want; if it gets too thick, add a bit of milk.
