Taco Pasta Casserole

- 1 12 oz box whole wheat penne
- 1 lb ground turkey
- 1/3 c taco seasoning
- 1 c chicken stock/broth
- 4 oz cream cheese
- 8 oz mild salsa
- 1 1/2 c shredded cheddar
Preheat the oven to 350* and spray a 9x12 casserole with nonstick spray.
Boil the pasta in salted water according to package directions and drain.
In a large pot or skillet, brown the ground turkey.
Once the meat is cooked through, drain and add back to the pot.
Add taco seasoning and broth and simmer for a few minutes.
Add the cream cheese and salsa and cook on low until incorporated.
Add the pasta and stir until evenly coated.
Spread in the casserole dish and top with cheddar.
Bake for 30 minutes or until bubbly.
