Oatmeal Lemon Cream Bars

For Bible Study a few weeks ago, Lyndsey made these fantastic bars. I made them shortly after for a staff grading day and company dinner and everyone loved them! Sandwiched in between the perfectly chewy crust and the slightly crunchy topping is a creamy and refreshing lemon filling. You guys are gonna love this recipe even more when I tell you it's super easy because it involves a packaged cookie mix! Talk about a win, win! Oatmeal Lemon Cream Bars

Ingredients (9 square bars)
  • 1 stick unsalted cold butter
  • 1 1 lb 1.5 oz package Betty Crocker oatmeal cookie mix
  • 1 egg
  • 1 14 oz can sweetened condensed milk
  • 2 tsp lemon zest
  • 1/4 c lemon juice from 2 lemons
Preheat the oven to 350* and spray an 8x8 inch square pan with nonstick spray.
In a large bowl, use a pastry cutter to blend the butter into the cookie mix until it resembles small peas. You can use a food processor instead.
Stir in the egg until crumbly.
Press half the dough into the bottom of the pan and bake for 15 minutes.
In a small bowl, stir the sweetened condensed milk, lemon zest and lemon juice until combined.
Spread the lemon mixture over the baked crust.
Evenly sprinkle the remaining crust ingredients over the lemon filling.
Bake for 25 minutes or until golden brown.
Let cool and chill for 30 minutes.
Store in an airtight container in the fridge.
