Snickerdoodle Cupcakes Part 2

Are you a cinnamon lover? Try out this super easy Snickerdoodle Cupcake recipe! I say "super easy" because you start with a plain white cake mix and add all sorts of goodies to it to make it richer. Each cinnamon cupcake is topped with a sweet cinnamon buttercream frosting. Oh yum...

Snickerdoodle Cupcakes

Ingredients (33 cupcakes)
    Cupcake Ingredients:
    • 1 pkg plain white cake mix
    • 1 c milk
    • 1 stick unsalted butter, melted and cooled
    • 3 large eggs
    • 1 tsp vanilla
    • 2 tsp cinnamon
    Frosting Ingredients:
    • 1 stick unsalted butter, softened
    • 3 3/4 c powdered sugar
    • 3-4 tbs milk
    • 1 tsp vanilla
    • 1 tsp cinnamon
    Preheat the oven to 350* and line a cupcake tin with paper liners.
    Blend the cake mix, milk, butter, eggs, vanilla and cinnamon in a large mixing bowl with an electric mixer for 1 minute on low speed.
    Increase the speed to medium and beat for 2 more minutes.
    Using a medium cookie scoop, place 2 scoops of batter into each liner.
    Bake for 18 minutes or until a toothpick inserted into a center cupcake comes out clean.
    Cool on wire racks completely before frosting.
    For the frosting, cream the butter with an electric mixer.
    Add the powdered sugar, milk, vanilla and cinnamon.
    Mix together with an electric mixer on low for 1 minute.
    Increase the speed to medium and beat for 1 minute more or until the frosting is fluffy.
    Pipe onto cooled cupcakes.
    Store in an airtight container.
