Strawberry Cake

Now that the weather has been warming up, Todd decided it would be a good idea to buy some strawberries. Unfortunately, he was not able to eat them after an emergency trip to the ER for a digestive infection. So there I was... left with a 2 lb container of strawberries from Costco. What's a girl to do with all those strawberries? The obvious answer is to make Strawberry Cake!


This cake is SO buttery... almost like a pound cake. It tastes best the same day you bake it because the top is all crisp and caramelized from the sprinkled sugar. It's still good a few days later but just keep in mind that the strawberries will get a tad bit soggy. But hey- if you like a soft cake, that might not be a bad thing! You can serve it with vanilla ice cream, a dusting of powdered sugar or whipped cream... or all three at once. :)


Strawberry Cake

Ingredients
  • 6 tbs unsalted butter, softened
  • 1 1/2 c flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 c plus 2 tbs sugar, divided
  • 1 large egg
  • 1/2 c milk
  • 1 tsp vanilla
  • 1 lb strawberries, hulled and halved
Instructions
Preheat the oven to 350* and spray a spring form pan with nonstick spray.
Whisk the flour, baking powder and salt together in a medium bowl.
In a large bowl, cream the butter and sugar with an electric mixer until fluffy, about 3 minutes.
Mix in the egg, milk and vanilla.
Gradually add the dry mixture, mixing until combined.
Pour the batter into the pan and spread in one even layer.
Place strawberries, cut side down, into the top of the batter.
Bake for 10 minutes and then reduce temperature to 325*.
Bake for 50-60 more minutes or until a toothpick inserted into the center comes out clean and the edges are golden brown.
Cool on a wire rack.
