Pink Lemonade Cupcakes

Welcome Birthday Week! I usually make an ice cream cake for my birthday however this year I made a birthday dessert using just what I had on hand in my pantry and fridge. Nothing like a "free" dessert, right? These Pink Lemonade Cupcakes were adapted from a combination of two sources (here and here) in order to make the ultimate lemon dessert. These cupcakes are incredibly moist and sticky and oh-so-good! Just when you thought they couldn't get any better, I topped them with a homemade pink lemon buttercream. Divine. Happy Birthday to me!



Pink Lemonade Cupcakes

Ingredients (24 cupcakes)
    Cupcake Ingredients:
    • 2 1/3 c flour
    • 1 tbs baking powder
    • 3/4 tsp salt
    • 2 c sugar
    • 1/2 c vegetable oil
    • 2 eggs
    • 1 1/2 c skim milk
    • 1 1/2 tsp lemon extract
    • 1 tsp lemon zest
    Frosting Ingredients:
    • 1 stick unsalted butter, softened
    • 3 3/4 c powdered sugar
    • 3-4 tbs milk
    • 1/2 tsp lemon extract
    • 1 tsp lemon zest
    • 1/8 tsp red food coloring
    Instructions
    Preheat the oven to 325* and line a muffin tin with paper liners.
    Whisk the flour, baking powder, salt and sugar in a medium to large bowl.
    Add the oil and mix with an electric mixer on low speed until incorporated. It may be a little lumpy.
    Add the eggs, milk, lemon extract and lemon zest.
    Mix on low speed until just combined, making sure all the lumps are gone. Do not over mix!
    Fill liners 3/4 full and bake for 18-22 minutes or until a toothpick comes out clean but the edges are not yet golden brown.
    Let cool on wire racks.
    For the frosting, cream the butter about one minute or until fluffy.
    Add the powdered sugar, milk, lemon extract, zest and food coloring.
    Blend with an electric mixer on low until all ingredients are incorporated.
    Increase speed to medium and beat for 1-2 minutes or until light and fluffy.
    Top cooled cupcakes with frosting.
    Store in an airtight container in the fridge.
