Peaches 'n Cream Cupcakes

Let me tell you, life has been pretty crazy. Two weeks ago, I planned on getting a lot done. I made a list and everything. Then life happened. I spent two full days working on lesson plans for the upcoming school year and didn't even finish one class. (I am teaching three classes next year.) I spent two afternoons taking my friend to a walk-in clinic. And dumb errands. Thennnn, this past week, I refinished a desk and prepared for Todd's big birthday party all on top of work. And did I mention my in-laws were in town redoing our bathroom for us? And who said summer was relaxing for teachers?

Okay... enough venting... for now. Time has totally escaped me and I have TONS of stuff to blog about so the next several posts are going to be catch ups.

I made these Peaches 'n Cream Cupcakes weeks ago. Like three weeks ago. Or four? Anyway, I still remember how yummy they were! They are super moist and sticky because you poke holes in the top of the cupcake and drizzle (or dump!) sweet peachy syrup on top. The cupcake just soaks it in... just like a poke cake. But here's the catch- just because it's super moist and super sticky doesn't mean it's super heavy. This cupcake is light and fresh due to the peach flavor and the homemade whipped cream topping. Oh, bliss in a cupcake...

Peaches 'n Cream Cupcakes

Ingredients (33 cupcakes)
    Cupcake Ingredients:
    • 1 29 oz can peach halves in heavy syrup, drained with syrup reserved
    • 1 pkg yellow cake mix
    • 1 stick unsalted butter, melted
    • 4 large eggs
    • 1 tsp vanilla
    Frosting Ingredients:
    • 1 c heavy whipping cream
    • 1/4 c powdered sugar
    Preheat the oven to 350* and line a cupcake tin with paper liners.
    Blend the peach halves in a blender or food processor until you have 1 1/2 c.
    Blend the cake mix, peach puree, melted butter, eggs and vanilla in a large bowl with an electric mixer on low speed until just combined.
    Increase the speed to medium and beat for 3 minutes more.
    Fill each cupcake liner 2/3 full or about 2 medium scoops.
    Bake until slightly golden brown and a toothpick comes out of a center cupcake clean, about 18-20 minutes.
    While the cupcakes are baking, place a medium mixing bowl and beaters in the freezer.
    Place cupcakes on wire racks and immediately poke 3-4 holes about halfway into each cupcake with a toothpick.
    Drizzle 1 to 2 tsp of peach syrup over the top.
    Let cupcakes cool.
    While the cupcakes are cooling, pour the whipping cream into the chilled bowl and beat on high speed for almost 2 minutes or until the cream has thickened.
    Add the powdered sugar and continue to beat on high until stiff peaks form, another 2 minutes more.
    Gently pipe onto cooled cupcakes.
    Store in an airtight container in the fridge.

      I think summer is meant for catch up if you're a teacher. Ideally the vacation sounds great, but you're so busy during the school year, some things are bound to fall behind. Good luck getting up to speed (where you want to be). And hurrah for in-laws who help w/remodels!!

    4. Hi Lindsey! Having help to get a bathroom reno done is a Big Time Saver! Just imagine if you still had THAT to do on your own! What a great blessing for you and Todd because bathrooms and kitchens are the big budget busters and labour is not cheap. You have a lot on your plate right now but you Will get through it and you will look back and it won't seem as overwhelming as it does now. Those cupcakes are delicious looking and I bet your in-laws would reno another bathroom to get a chance to enjoy some more of them! You always have great recipes Lindsey and the photos are sooo professional looking! Well done!
