- 2 lb ground turkey
- 1/2 c taco seasoning
- 10 oz can enchilada sauce
- 10 1/2 oz can cream of mushroom soup
- 8 low carb tortillas
- 3 c shredded cheddar cheese
Grease a 9x12 casserole dish and preheat the oven to 375*.
Brown the turkey with the taco seasoning.
Whisk the soup and enchilada sauce in a small bowl until combined.
Tear the tortillas into quarters.
Layer tortillas on the bottom of the greased casserole dish.
Layer half of the meat on top of the tortillas.
Spread a third of the soup mixture on top of the meat.
Sprinkle 1 c of cheese on top.
Repeat by layering tortillas, meat, soup and cheese.
End with another layer of tortillas, soup and cheese.
Bake for 20 minutes or until hot and bubbly.
