We have a new low carb recipe to add to our dinner rotation! This Enchilada Casserole was deceptively delicious! Cheesy and full of flavor, this is one casserole you will want to try out!

Enchilada Casserole

  • 2 lb ground turkey
  • 1/2 c taco seasoning
  • 10 oz can enchilada sauce
  • 10 1/2 oz can cream of mushroom soup
  • 8 low carb tortillas
  • 3 c shredded cheddar cheese
Grease a 9x12 casserole dish and preheat the oven to 375*.
Brown the turkey with the taco seasoning.
Whisk the soup and enchilada sauce in a small bowl until combined.
Tear the tortillas into quarters.
Layer tortillas on the bottom of the greased casserole dish.
Layer half of the meat on top of the tortillas.
Spread a third of the soup mixture on top of the meat.
Sprinkle 1 c of cheese on top.
Repeat by layering tortillas, meat, soup and cheese.
End with another layer of tortillas, soup and cheese.
Bake for 20 minutes or until hot and bubbly.
