Mhm... Summer is almost here! I am so excited to be finished with school this year! We are wrapping up the last few days and clearing out our classrooms. On the other hand, summer brings warm weather. And by warm weather, I mean hot weather. I am not a fan of temps 80 and above. It brings that nasty thing called sweat. Anyways, here's a perfect summer recipe that will leave you feeling light and refreshed! Added bonus? Oh yeah, it's low carb too!

Cherry Tomato Salad

  • 4 c (about 1.5-2 lbs) cherry tomatoes, halved
  • 1/4 c olive oil
  • 3 tbs red wine vinegar
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1 1/2 tsp splenda
In a small bowl, whisk together all ingredients except for the tomatoes.
Place the tomatoes in a medium bowl and pour the dressing on top.
Gently toss with a large spoon until all tomatoes are evenly coated in the dressing.
Chill for at least 2 hours.
Stir the mixture again before serving. Best at room temperature!

  2. You don't like the heat! I love summer and the hot days. The salad is beautiful. Tomatoes are my Yorkie's favorite food. She's almost a total vegetarian. Enjoy your time off of school and have a gorgeous summer.

  6. Hi Lindsey! Just wanted to comment on your using Splenda in with your tomatoes. My Norwegian mother-in-law taught me to use, "just a little bit of sugar" when making anything with a lot of tomatoes in it, either cooked or raw, and it is AMAZING what a subtle but important difference it makes to the flavor. It is good to see that the Splenda is part of your recipe. I shall Definitely be making this salad this summer! :D
