RICE KRISPIE TREATS TWO WAYS: BUTTERFINGER & OREO

So my birthday was at the beginning of June. I love celebrating my birthday! It morphed from a birthday-day into a birthday-week to a birthday-month. Next, I think I should celebrate each birthday-year! What do you think? :)

I also got a free grilled sandwich from Chick-fil-a because my local restaurant partners with my school. They give a free coupon, cup, stuffed cow, and pencil to each teacher on their birthday! Chick-fil-a for the win!


Also, before you think that I am a complete PIG, remember- the food was spaced out over the entire month. Also, I didn't use the last five freebies, because honestly- I didn't think they were such great deals.

Anyways, for my birthday this year, I decided to make two kinds of Rice Krispie treats. Time to "dazzle up" the regular version, birthday-style! So I whipped up both Butterfinger and Oreo varieties. I just love making Rice Krispie treats. They are so simple and don't require you to turn on the hot oven in the hot summertime. Just make sure that you spray your bowl and utensils really well so that you aren't stuck scraping hardened marshmallow off your dishes! (Soaking in super hot water also helps to melt it all away.)


While both were yummy, I think I will only make the Oreo version again. Don't get me wrong- I liked both! However, the Butterfinger one was a bit too rich for my tastes. :) So much goin' on! But hey- if you like decadent desserts, the Butterfinger treats are the one for you! On the other hand, the Oreo treats were light and fluffy and tasted like cookies 'n cream! But enough drooling... here are the recipes! 

Butterfinger Rice Krispie Treats

Ingredients
  • 1/2 c peanut butter
  • 1/2 c candy corn
  • 3 tbs unsalted butter
  • 1 10 oz pkg marshmallows
  • 1/2 tsp salt
  • 6 c Rice Krispies cereal
  • 2 c chocolate chips
  • 2 tsp vegetable oil
  • 8 fun-size Butterfingers, crushed/chopped
  • Canola/vegetable spray
Instructions
Grease a 13×9-inch baking dish with cooking spray. I recommend coating the bowl and any utensils you will be using with cooking spray as well.
Melt the candy corn in the microwave in thirty-second intervals in a medium bowl.
Once melted, stir in the peanut butter.
Add the butter and marshmallows, stirring until completely melted.
Quickly incorporate the salt.
Measure the Rice Krispies in a large bowl.
Pour the melted marshmallow mixture over the cereal and quickly and gently fold until well combined.
Transfer the mixture to the greased baking dish and press in until firm. I like to spray one hand with cooking spray and use that hand to press the cereal mixture in.
In a small bowl, melt the chocolate chips and vegetable oil in the microwave in thirty-second intervals.
Spread the melted chocolate over the top of the Rice Krispies treats.
Sprinkle crushed Butterfingers over the chocolate and refrigerate until set.

Oreo Rice Krispie Treats

Ingredients
  • 6 c Rice Krispie cereal
  • 20 Oreos, chopped
  • 1 10 oz pkg marshmallows
  • 3 tbs butter
  • 1/2 c white chocolate
Instructions
Grease a 13×9-inch baking dish with cooking spray. I recommend coating the bowl and any utensils you will be using with cooking spray as well.
In a medium bowl, melt the butter and marshmallows in the microwave in 30 second intervals, stirring until completely melted.
Measure the Rice Krispies in a large bowl and toss with the crushed Oreos.
Pour the melted marshmallow mixture over the cereal and quickly and gently fold until well combined.
Transfer the mixture to the greased baking dish and press in until firm. I like to spray one hand with cooking spray and use that hand to press the cereal mixture in.
In a small bowl, melt the white chocolate in the microwave in thirty-second intervals.
Drizzle the melted chocolate over the top of the Rice Krispies treats.
